The PRO Fillet Series is available in 13, 18 and 22 cm blades with a semi-flexible blade with a long and thin shape to maximize the length of the cuts. The length of the blade depends not only on the application, but also on the type of cut desired. A larger fish requires a longer blade.
The EKA Pro Fillet kitchen knife series is made of Sandvick 12C27 stainless steel with a hardness of 58 HRC.
The Pro Fillet series handles are all made from Santoprene, a hygienically approved material worldwide and known for its secure grip properties under stress.
